Spiced Peach Jam

Ingredients:

  • 3 lbs. soft, ripe peaches
  • 1/4 cup lime juice
  • 1 tsp. cinnamon
  • 7 1/2 cup sugar
  • 1/2 tsp. allspice
  • 1/4 tsp. cloves
  • 1 bottle liquid fruit pectin

Directions:

Pare and pit peaches. Chop fine or grind. Measure 4 cups into large saucepan. Add lime juice. Mix sugar and spices; add. Place over high heat. Bring to a full rolling boil. Boil hard one minute, stirring constantly. Remove from heat. Stir in pectin. Stir and skim by turns for five minutes. Ladle into glasses. Paraffin at once.

Paraffin at once?

You mean pour wax over the top of this? Does this mean they can be stored like the ones canned with lids, unrefrigerated? Any chance you could just lid these and freeze them?
