Mexican Chip Casserole

Great spicy dish. Love the corn chips on top!

Ingredients:

  • 1 lb. ground pork or beef
  • 1 onion, chopped
  • 1 (16 oz.) can chili beans
  • 1 (8 oz.) can tomato sauce
  • 1 (15 oz.) can enchilada sauce
  • 1 (6 oz.) pkg. corn chips
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups sour cream

Directions:

Brown meat and onion. Add beans and sauces. Set aside 1 cup corn chips and 1/2 cup cheese. Mix remaining chips and cheese into meat mixture. Place in 1 1/2 quart baking dish. Bake at 350 degrees F for 25 minutes. Spread sour cream and remaining cheese over top. Sprinkle with remaining chips. Bake additional 5-10 minutes, or until cheese is melted.

Cooking Time: 30-35 Minutes
