Zesty Orange Pasta Salad
- 1 cup mayonnaise
- 1/2 cup orange juice
- 2 tsp dried basil
- 1/4 tsp ground ginger
- 4 cooked, cubed boneless skinless chicken breasts
- 2 cups rotini pasta cooked, and drained
- 1 can (11 oz.) mandarin oranges, drained
- 1/2 cup chopped pecan pieces
In a large bowl, mix mayonnaise, orange juice, basil and ginger. Add remaining ingredients and toss lightly. Cover with plastic wrap and refrigerate at least 2 hours to blend flavors.
