Scalloped Onions

A favorite of my grandmother.

Ingredients:

  • 2 lbs. small white onions
  • 1/4 cup butter or margarine
  • 1/4 cup flour
  • 2 cups milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup sharp cheddar cheese, grated
  • 1/4 cup pimento, chopped
  • 1/4 cup parsley, chopped
  • 1/2 cup bread crumbs, buttered

Directions:

Place onions in 1 1/2 quart baking dish. In saucepan, melt butter. Add flour and blend until smooth. Cook 3 minutes. Add milk and bring to a boil. Cook 5 minutes. Stir in cheese until melted.

Add salt, pepper, pimento and parsley. Pour over onions and sprinkle with buttered bread crumbs. Bake at 375 degrees F for 15 minutes.

Cooking Time: 15 Minutes

Can be sliced or whole. I do the onions in a tomato sauce, too! Whole, covered & basted with a rich spaghetti sauce! So good!
