Italian Cheese Ball

I was asked at the last minute so to speak, to make something for a welcome party. I didn't have time to browse through many recipes, so tossed together things that I thought would make a good cheese ball with assorted crackers, and came up with this recipe. My daughters say it's terrific. Hope y'all like it.

Ingredients

  • 8 oz. cream cheese, softened
  • 8 oz. blue cheese, crumbled
  • 1/3 cup butter, softened
  • 1 Tbsp. chives or green onion, chopped
  • 2/3 cup black ripe olives, coarsely chopped
  • 1/3 cup walnuts, finely chopped

Directions

Blend cream cheese, blue cheese and butter. Add chives and olives. Mix well and form into a ball. Wrap in plastic wrap and chill a few hours or overnight. Roll in chopped walnuts before serving. Serve with Wheat Thins or other crackers.
