Boil Water Before Scalding Milk

It is extremely difficult to keep milk from burning and sticking to the bottom of the pan when boiling or scalding the liquid as some recipes require. Try this: you first put a small amount of water into the pot and heat it to boiling before adding the milk.

I had never thought of doing this! Scorched milk is so hard to get out of pans too, so this tip will save lots of grief to be sure. Also, think about using the microwave to scald milk, it also works wonderfully.
