Super Oatmeal Cookies

Ingredients

  • 1 cup flour
  • 1 tsp. cinnamon
  • 1/2 tsp. each baking powder, baking soda, and salt
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • Ad

  • 1/3 cup applesauce
  • 1 egg
  • 2 tablespoons margarine, softened
  • 1 tsp. vanilla
  • 1 1/2 cups quick oats
  • 3/4 cup raisins
  • 1/2 cup chopped walnuts

Directions

Combine the sugars, applesauce, egg, margarine, and vanilla in a large mixing bowl. Mix in the flour, baking powder, baking soda, salt, cinnamon, quick oats, raisins, and chopped walnuts. Preheat oven to 350 degrees F. Drop dough by teaspoonfuls onto a baking sheet. Bake 10 to 12 minutes. Remove from baking sheet and cool before eating.

Just a question. Are these soft, moist oatmeal cookies or are they crisp? I like the super soft with a gooey center cookie.

Hmmm, I don't have any applesauce in the cupboard...what could I substitute for it?
