Three Cheese Sauce

Homemade cheese sauce is so tasty and best yet, it's fresh and versatile! Use it as a sauce for steamed, baked or roasted veggies, as a pasta sauce, and even in baked dishes that call for store bought cheese sauces.

Ingredients:

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 cup heavy cream
  • 2 cups milk
  • 2 1/2 cups sharp cheddar cheese, grated or finely shredded
  • 4 oz. cream cheese, cut in to small cubes
  • 1/4 cup fresh Parmesan cheese, grated or finely shredded
  • salt to taste
  • pinch ground cayenne pepper, optional

Directions:

Melt butter in a heavy saucepan over medium high heat; stir in flour and cook, stirring constantly, for 2 minutes.

Slowly whisk in cream until smooth, then whisk in milk. Gently simmer until the sauce is thick enough to coat a spoon, about 5 minutes. Remove from the heat and whisk in cheddar, cream cheese and Parmesan until melted and smooth. Season with salt and ground cayenne pepper, and serve.

Thanks a lot. I have been waiting for a recipe like this. You can also use this for over cheesy potatoes. I know a lot of people like to do this with mashed potatoes, but it works really great pouring the sauce over potatoes that have just been drained.

Mixing the potatoes after putting the sauce on makes the sauce a little thicker and breaks up some potatoes, and is a lot quicker too! Thank you for sharing.
