Grandma's Stovetop Meatloaf

It's all done in one pot and is so good. You can serve it over a piece of bread or not.

Ingredients:

  • 1 lb. ground turkey
  • 2 eggs
  • 1 small onion, diced
  • salt
  • pepper
  • parsley
  • breadcrumbs
  • olive oil
  • 2 cans of peas
  • 1 can of carrots
  • 2 small cans of Hunt's tomato sauce
  • Ad

  • 2 small cans of water

Directions:

Mix ground turkey with two eggs. Add breadcrumbs and onion. Add some parsley, salt and pepper to your taste Make into a loaf.

Put olive oil in large pot on low flame and get it hot. Place loaf in and cook for 5 minutes on each side. It may crumble when you try and turn it over, but that's alright.

Cook both sides then place the potatoes, carrots, sauce and water in. Put cover on pot on low flame and cook for 1 hour. Check periodically to make sure it doesn't dry out.

Can be served on top of a slice of bread.

Your directions say to add "potatoes" with carrots, sauce, etc but there weren't potatoes listed in the ingredients. Did you mean 'peas' or did you mean to say potatoes instead of peas? I hope you can clarify this...thanks.

Just a thought, but if you are going to cook this for an hour, wouldn't fresh carrots, peas and/or potatoes be better? Certainly, they would be more nutritious than canned.
