Curried Chicken Salad

This is a fast and easy chicken salad with amazing flavor. Serve it in pitas, tortillas, on whole grain bread, or in lettuce wraps.

Ingredients:

  • 2 boneless skinless chicken breasts cooked and cut into 1/2 inch cubes
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tart apple (granny smith), cored and cut into 1/2 inch cubes
  • Advertisement

  • 2 cups seedless grapes, halved
  • 2 stalks of celery, diced
  • 3 scallions chopped
  • 1/2 cup chopped pecans, toasted
  • 2 tsp. Garam Masala curry powder or to taste

Directions:

Mix mayonnaise, sour cream, and curry powder. Add all other ingredients and mix well. Refrigerate 2 hours or more to blend flavors.

Servings: 6

This salad sounds delicious and my hubby and I both enjoy the flavor of good curry. Your recipe is a keeper.

I love curry and can't wait to try this. I am not a fan of grapes in my chicken salad so i will leave them out. Now I have a hankering for chicken salad as I haven't had some in quite a while!
