My mom loved to make this kind of thing at Christmas time and have friends in to celebrate. Love the cheese sauce!

Ingredients:

  • 4 oz. (1cup) diced Canadian bacon

  • 1/4 cup chopped green onion
  • 3 Tbsp. margarine
  • 12 beaten eggs
  • 3 oz. can mushrooms, drained
  • 1 recipe of cheese sauce (listed below ingredients)
  • 2 1/4 cup soft bread crumbs
  • 1/8 tsp. paprika
  • 4 Tbsp. melted butter
  • Cheese Sauce:
    • 2 Tbsp. butter or margarine
    • 2 Tbsp. flour
    • 1/2 tsp. salt
    • 1/8 tsp. pepper
    • 2 cup milk
    • 1 cup shredded American cheese

    Directions:

    Cook bacon and onion in butter until onion is tender. Add eggs, scramble just until set. Fold mushrooms and egg into cheese sauce. Turn into 9x13 inch pan. Combine melted butter, crumbs and paprika. Sprinkle on eggs, cover and chill. Bake, uncovered, at 350 for 30 minutes.

    Cheese Sauce: melt butter, blend in flour, salt and pepper. Add milk, cook and stir until bubbly. Stir in cheese until melted.

    Servings: 8-10
    Prep Time: 20 Minutes
    Cooking Time: 30 Minutes
