Peanut Rolls (Southern Illinois Recipe)

Bronze Recipe Medal for All Time! 64 Recipes

  • 4 eggs
  • 2 cups sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 cups flour
  • 1 cup boiling water
  • 2 tsp. vanilla
  • peanuts, crushed or ground

Beat eggs until fluffy, add sugar gradually. Add water, vanilla, then dry ingredients.

Bake in sheet pan. When cool, cut into squares and spread with the following.

  • 1 lb. Powdered sugar
  • 1 stick oleo (margarine)
  • milk (add a few tablespoons at a time until desired thickness)

This won't be very thick. Ice squares one at a time and roll in crushed or ground peanuts. It is helpful if you have a helper to do this!

What temp should peanut rolls be baked at and for how long?

Bake at 350 degrees, for about 20 minutes. You want them lightly browned. Too done, make a dry roll, too light makes them hard to ice.

These were my favorite when my mother made them many years ago. I've searched for the recipe for years! Thanks for posting this delicious recipe
