To keep cheeses fresh, dampen a piece of paper towel with vinegar and place it in the container with the cheese. This works with shredded cheeses as well as blocks.

This works for me all the time. What a relief to not be concerned about cheese being moldy. And absolutely no vinegar taste whatsoever.
