Zucchini Pineapple Cake

Ingredients:

  • 3 eggs
  • 2 cup sugar
  • 2 tsp. vanilla
  • 1 cup cooking oil
  • 2 cup zucchini, peeled and shredded
  • 3 cup all purpose flour
  • 1 tsp. baking powder
  • 1/2 cup raisins
  • 1 tsp. salt
  • 1 cup chopped nuts
  • 1 cup crushed pineapple, drained

Directions:

Beat eggs till fluffy. Add sugar, vanilla, oil and zucchini. Blend well. Add dry ingredients and mix well. Stir in pineapple, raisins and nuts.

Can bake in 1 large greased and floured loaf pan or 2 smaller loaf pans. Bake in 325 degree F oven for 1 hour. Cool on wire rack. When cool, wrap in foil to store.
