- 7 small to medium ripe peaches, peeled, pitted and diced
- 1/2 cup sugar
- 1 tsp. ginger
- 2 Tbsp. cornstarch
- 1-18 oz. cake mix (yellow or white) unprepared
- 1 cup butter, melted
Preheat oven to 350 degrees F. Lightly spray a 9x13 inch pan. In a medium saucepan, combine peaches, sugar, ginger and cornstarch. Bring to a boil and cook for 1 minute. Remove from heat. Pour into prepared 9x13 inch pan. Sprinkle dry cake mix (I use a flour sifter to make sure cake mix will be smooth) over the peach mixture. Drizzle the butter over the cake mix. Bake for 1 hour or until top is lightly browned and peaches are bubbling. Serve with whipped or ice cream.
