Spinach and Cheddar Quiche

I love quiche, it is one of my favorite light meals.



  1. Heat oven 350 degrees F. Thaw, drain and squeeze the frozen spinach and onion/pepper mix.
  2. Beat eggs.
  3. In a bowl, put the cheddar cheese, and mix with the flour.
  4. Add remaining ingredients. Stir very well.
  5. Pour gently into the pie shell.
  6. Place your pie shell on a cookie sheet in the middle of the oven.
  7. Bake for 45-50 minutes or until a knife comes out clean.

Not meaning to rain on your parade, Jackie, but you call this "light?" With two cups of cheese, pie pastry (usually laden with unnecessary fat), half and half cream and whole eggs? Wowsa, Girl, you must be seriously into working out! Give this a try next time you're feeling in the mood to experiment? Leftover spaghetti or other pasta for the "crust," nutrtional yeast mixed with 2 cups zero-fat plain yogurt, egg whiles and of course all those great veg.
