  • 1 cup grated cheddar cheese
  • 3/4 cup flour
  • 1/4 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/4-1/2 cup melted butter or margarine
  • milk*
Spinach Filling:
  • 4 eggs, beaten
  • 1 1/2 cup sour cream
  • 1 pkg. chopped frozen spinach, thawed and squeezed dry (10oz.)
  • 1/3 cup green onions, chopped
  • Ad

  • 1/2 tsp. salt
  • 1 tsp. Worcestershire sauce
  • 1 1/2 cup grated Swiss cheese


For Cheddar crust: Mix cheese, flour, dry mustard, salt and milk with butter. Spray non-stick pie dish with non-stick cooking spray and press mixture into dish. Partially bake crust at 400 degrees F for 8 minutes.

For filling: Mix the beaten eggs and sour cream until smooth. Add spinach, green onions, salt & Worcestershire sauce. Fold in the Swiss cheese. Pour into partially baked pie shell. Bake 45-50 minutes at 375 degrees F or until knife inserted in center comes our clean. Let stand 5 minutes before cutting. Serves 6-8.

This makes a great brunch dish! Very attractive looking dish for guests and very good.

Total Time: 1 hour, 15 minutes

Yield: 6-8 servings


  • 1 unbaked pie shell ($1.79)
  • 1 box frozen chopped spinach ($.89)
  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup mayonnaise
  • 2 Tbsp flour
  • 1 Tbsp minced oinion
  • 1 cup cheddar cheese, shredded ($.89)


  1. Thaw and drain spinach (squeeze out water).
  2. Add eggs, milk, mayonnaise, flour, and onion to spinach and put in pastry shell.
  3. Sprinkle cheddar cheese over top.
  4. Bake at 350 F for 45 minutes.

Spinach Quiche I


  • 1 unbaked 9 in. pie crust
  • 2 Tbsp. margarine
  • 2 Tbsp. chopped green onion
  • 2 (10 oz.) packages frozen chopped spinach, cooked
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. nutmeg
  • 3/4 cup grated Parmesan cheese, divided
  • 3/4 cup grated Cheddar cheese
  • 1 1/4 cup whipping cream
  • 4 eggs, beaten


With a fork, prick pie crust and bake at 400 degrees F for 10 minutes or till slightly brown. Melt butter in a small skillet, add onion and saute till tender.

Drain spinach well, in a colander and with using paper towels to push out all liquid. In a large mixing bowl, combine spinach, onion, salt, pepper, nutmeg, all of Cheddar cheese, 1/2 cup Parmesan cheese, stirring well.


In a medium mixing bowl, combine whipped cream and eggs, beating well; add to spinach mixture, stirring well. Spoon mixture into pie crust and sprinkle with remaining 1/4 cup Parmesan cheese. Bake at 375 degrees F for 30-40 minutes. Serves: 6-8.

Spinach Quiche II


  • 1 pie shell, unbaked (10 inch)
  • 1 egg white, slightly beaten
  • 1 envelope dry onion soup mix
  • 3 Tbsp. flour
  • 1 pkg. frozen chipped spinach, cooked and drained
  • 1/2 lb. boiled ham, cubed or cooked bacon, diced
  • 1/2 lb. swiss cheese, grated
  • 1 whole egg
  • 1 egg yolk
  • 2/3 cup half and half


Brush pie shell with egg white, cover and refrigerate. Preheat oven to 375 degrees F. In large bowl, combine onion soup mix with flour. Add drained spinach, ham and 1 cup cheese. Mix well. In small bowl, beat whole egg yolk and cream until well mixed. Spoon spinach mixture into pastry and top with remaining cheese. Spoon on egg mixture. Bake at 375 degrees F for 45 minutes or until nicely brown and puffy. Let cool slightly to 'set up.' Yield: 6-8 servings.

Spinach Bacon Quiche I


  • Half of 11 oz. pig. pie crust mix
  • 8 oz. sliced bacon
  • 1 onion, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. ground nutmeg
  • 1 pkg. frozen chopped spinach, thawed, squeezed dry
  • 1/4 cup drained chopped pimientos
  • 3 eggs
  • 1 1/2 cup milk
  • 6 oz. Swiss cheese, shredded


Preheat oven to 375 degrees F. Prepare pie crust according to package directions for 1 crust. Roll into 10 inch circle. Fit into 9 inch pie pan; trim edge.In nonstick skillet over medium high heat cook bacon until crisp, 6-8 minutes. Discard all but 1 Tbsp. fat from skillet. To skillet add next 4 ingredients; cook until softened, 3-4 minutes; stir in spinach and pimientos. Cook, stirring, 1 minute. Beat eggs with milk. Crumble bacon into crust. Top with spinach mixture and 1 cup cheese. Pour egg mixture into crust. Sprinkle with remaining cheese. Bake until set and golden, 40 minutes. Let stand 20 minutes before serving.

Spinach Bacon Quiche II


  • 4 eggs
  • 2 cups milk
  • 1-1/4 cups shredded cheddar cheese, divided
  • 1/4 cup finely chopped onion
  • 4 bacon strips, cooked and crumbled
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/4 tsp. paprika
  • 1 package (10 oz.) frozen chopped spinach, cooked and drained
  • 1 unbaked pastry shell (9-inches)


In a large bowl, beat eggs; whisk in milk, 1 cup cheese, onion, bacon, salt, mustard and paprika. Add spinach. Pour into the pie shell. Sprinkle with the remaining cheese. Bake at 400 degrees F. for 40 minutes or until a knife inserted halfway between the center and the edge comes out clean. 6 Servings.

Grease 9x13 inch pan with butter. Cut crusts off bread. Butter both sides of bread. Place 8 slices of bread in pan, 1/2 of each of the cheeses, 1/2 of the bacon, a layer of leaf spinach, and mushrooms, and the green peppers.
