I need a recipe for Banana cake. My daughter's favorite. Her B-Day is in two days. I usually buy Dunkan Hines but I can't find it.

Wonderful Banana Cake
Yields 1 -9x13 inch cake.
"Quick and easy flavorful banana cake. Frost with whipped cream, if desired."
1 (18.5 ounce) package yellow cake mix 2 very ripe bananas, mashed 1 teaspoon baking soda
Prepare yellow cake mix according to package directions.
Mash the bananas with the baking soda and stir into the cake mix batter. Pour batter into one greased and floured 9x13 inch baking pan. Do not preheat oven. Place uncooked cake in oven and turn oven on to 350 degrees F (175 degrees C). Bake for 1 hour. Let cake cool thoroughly and then refrigerate.

3 cups cake flour 1 teaspoon baking powder 1 1/8 teaspoons baking soda 3/4 cup unsalted butter 2 1/4 cups white sugar 3/4 teaspoon salt 3 eggs 1 1/2 cups mashed bananas 6 tablespoons buttermilk 1 teaspoon vanilla extract
Preheat oven to 375 degrees F ( 190 degrees C). Grease and flour 3, 9-inch round cake pans. Sift the flour with the baking powder and soda. In a large bowl, cream together the butter or margarine, sugar, and salt. Add eggs one at a time to the creamed mixture, beating well after each addition. Add alternately to the creamed mixture the flour mixture, the bananas, and the buttermilk. Add vanilla, and mix well. Pour into the well greased pans. Bake in a preheated 375 degrees F (190 degrees C) oven for 30 to 40 minutes. Let cake cool and frost with your choice of icings.

Bake cake about 45 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven, and cool on wire racks. 2 tablespoons lemon juice 2/3 cup milk 2 large very ripe bananas, mashed 1 (18.25 ounce) package butter cake mix 1 teaspoon baking soda 1/2 cup butter, softened 3 eggs 1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Put 1 tablespoon lemon juice in a measuring cup with 2/3 cup milk. Set aside. Mash bananas with a fork, adding the remaining 1 tablespoon lemon juice to them as you mash. Set aside. In a large bowl, combine cake mix and baking soda. Stir to combine. Add bananas, softened butter, milk mixture, eggs and vanilla. Beat at low speed until moistened (about 30 seconds). Beat at medium speed for 4 minutes. Pour into prepared pan. Bake in the preheated oven for 30 to 35 minutes, or until center of cake springs back when lightly tapped. A toothpick stuck in the center may leave a slight crumb. Allow to cool on a wire rack.

In a large bowl, cream the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and mashed bananas. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 13x9 inch pan. Beat cake mix, mashed bananas, oil and eggs with an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for 2 more minutes. Pour the batter into the prepared pan. Bake at 350 degrees F (175 degrees C) for 33 to 36 minutes or until a toothpick inserted near the center comes out clean. Let cake cool then frost with your choice of frosting, if desired.

Banana Cake
21/4 cups flour 11/2 cups sugar 11/2 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 cup mashed ripe banana(about3) 3/4 cup buttermilk or sour milk 1/2 cup shortning 1 tsp vanilla 2 eggs.
Grease and flour 2- 8 or 9 inch cake pans. Stir together flour, sugar, baking powder, baking soda, and salt. Add bananas, buttermilk or sour milk, shortening, and vanilla. Beat on low till combined. Add eggs, beat on medium 2 min. Pour into pans. Bake 350 degrees for 25 to 30 min. Cool in pans 10 min. remove from pans and cool completely, frost.

Sharyl, my kid's favorite banana cake is made from a regular white or yellor cake mix, add l/2 tsp. baking soda, and two ripe bananas. Bake as usual. THis was on the back of a cake mix years ago and I have been making it for years. It makes a very moist banana cake. I usually frost it with either a carmel frosting or creme cheese frosting.
