This cake is so delicious and incredibly easy to make. The best part about it is the butterscotch drizzling sauce is made at the same time, right under the cake in the same pan. All in one goodness!

Total Time: 50 minutes

Yield: 6-8 Servings

Ingredients:

  • 1 cup flour
  • 1 Tbsp baking powder
  • 1/2 cup fine sugar (Caster sugar)
  • 1 beaten egg
  • 1 mashed banana
  • 1 cup milk
  • 1 tsp vanilla extract
  • 6 Tbsp melted butter
  • 1/2 cup light brown sugar
  • 2 Tbsp golden syrup or corn syrup
  • 2/3 cup boiling water
  • whipped cream or ice cream to Serve

Steps:

  1. Preheat oven 350°F.
  2. Sift the flour and baking powder in a large bowl. Add sugar.
  3. Ad

  4. Mix together the beaten egg, the mashed banana, milk, vanilla extract, and melted butter.
  5. Pour mixture into dry ingredients and stir to mix until combined.
  6. Pour this wet dough into a 9-inch pie dish or large Pyrex baking dish then place on a baking sheet.
  7. To make the butterscotch sauce, put the brown sugar, golden/corn syrup and boiling water in a saucepan. Bring to a boil, then drizzle it all over the dough, right over the whole thing, in a zig-zag manner from one end to the other.
  8. Bake in preheated oven for 30-40 minutes, or until it feels slightly firm in the center.
  9. When you cut into it, you will see the butterscotch sauce has formed on the bottom of the cake. Use a spoon to drizzle on top of cake while serving. Serve with whipped cream or vanilla ice cream. Yum!

Ingredients:

  • 2 cups sifted cake flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 3/4 tsp. salt
  • 1 1/3 cups sugar
  • 1/2 cup buttermilk or sour milk
  • 1 tsp. vanilla
  • 1 cup mashed ripe bananas
  • 2 eggs, unbeaten
  • 1/2 cup shortening
Banana Frosting:
  • 1/3 cup margarine
  • 1 ripe banana, mashed
  • 1 tsp. vanilla
  • 2-3 cups powdered sugar

Directions:

Sift dry ingredients, add 1/4 cup of milk and bananas to shortening and beat 2 minutes. Add eggs and remaining milk and beat 2 more minutes. Bake at 375 degrees F for 25 minutes. Makes 2 (8 inch) round pans or 1 (9x13 inch) cake pan.

For Frosting: Beat ingredients until creamy, add powdered sugar 1 cup at a time.

This is the best banana cake I've ever tried, and I've tried a few. The frosting is my absolute favorite, with an incredible, creamy texture and a wonderful flavor.

Cake:

Cream butter and sugar and beat until light and fluffy. Add mashed bananas and egg yolks and beat. Mix flour and baking powder and set aside. Mix baking soda with hot water. Add the baking soda and water to the banana mixture alternately with the flour, 1/2 at a time. Mix well. Add vanilla and nuts, mix well. Fold in egg whites. Pour into 2 9 inch well greased and floured cake pans. Bake at 350 degrees F for 30 - 35 minutes.

Frosting:

Mix the flour and the milk well, making sure there are no lumps. In sauce pan, thicken over medium high heat, stirring constantly. It will get a bit thicker than pudding. Allow this to cool, covered so that it doesn't develop a skin. When you add it to the other ingredients, you want it to be luke-warm. It will help to incorporate the sugar and make the frosting silkier, but you do not want it so warm it melts the butter.

While the flour and milk cool, put the butter and shortening in your mixer bowl. Mix thoroughly. Gradually beat the sugar in, creaming them very well until light and fluffy. Add the lukewarm white sauce a tablespoon at a time. When it is beaten very well, and is light, fluffy, and silky, beat in the vanilla.

This makes a generous amount of frosting, and will frost a three layer cake easily. I go ahead and put the whole amount on the banana cake.

Ingredients

  • 2 1/4 cups cake flour
  • 1 1/2 cups sugar
  • 1 tsp. salt
  • 3 tsp. baking powder
  • 1/2 cup oil
  • 5 egg yolks, unbeaten
  • 3/4 cup cold water
  • 1 cup very ripe mashed bananas
  • 1 cup egg whites
  • 1/2 tsp. cream of tartar
  • 1 tsp. lemon extract

Directions

Sift dry ingredients into mixing bowl. Make a well in the dry ingredients and add oil, egg yolks, water, bananas and lemon extract in order given.combine egg whites and cream of tartar in large mixing bowl. Beat until it forms very stiff peaks (stiffer than for meringue of angel food). Fold egg yolk mixture gradually into egg whites. Bake in ungreased 10 inch tube pan in moderately slow oven (325 degrees F) for 55 minutes, then 350 degrees F until done.

Note: To make cake flour, use 2 Tbsp. cornstarch and fill cup with flour. This equals 1 cup cake flour.

Cream the sugar and shortening until fluffy. Beat in the vanilla, eggs and bananas. Sift the dry ingredients, combine with the cherries, and add alternately with the milk, beating well after each addition.

Recipe for Nana's Banana Cake. Cream sugar and Crisco. Add eggs and cake flour, beating until smooth. Add all other ingredients and mix well. Pour into a 9X13 inch pan. Bake at 375 degrees F until done (about 35-40 minutes).

Carrot Cake Recipe

1 cup olive oil

4 whole eggs

2 teaspoons baking powder

2 cups white granulated sugar

2 cups grated raw carrots

2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons cinnamon

1/2 cup chopped nuts (optional)

Mix oil and eggs together. Sift dry ingredients together and add to the oil and egg mixture. Add carrots and mix well. Add nuts and mix. Grease and flour baking pan. Bake at 350 degrees for 35-40 minutes or until cake is lightly browned. Cook cake before frosting.

Cream Cheese Frosting

1-8 ounce package softened cream cheese

1-16 ounce box of powdered sugar

1/2 cup margarine

1 teaspoon vanilla extract

Mix cream cheese and margarine together in bowl and add sugar. Mix until creamy. Add vanilla and mix. Spread over cake.

CHERRY PECAN CARROT LAYER CAKE

Ingredients:

3/4 cup (1-1/2 sticks) butter, softened

1-1/2 cups granulated sugar

3 eggs

1 cup diced fresh or canned mango

1/4 cup mango or orange juice

2 cups shredded, pared, carrots

2 cups all-purpose flour

2 teaspoons baking soda

2 teaspoons ground cinnamon

2 teaspoons ground ginger

1 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup dried cherries

1 cup chopped pecans

1/3 cup dried cherries, finely chopped

1/3 cup whipping cream

3/4 cup (1-1/2 sticks) butter, softened

6 ounces cream cheese, softened

1 tablespoon rum or orange juice

1-1/2 teaspoon vanilla extract

5 cups confectioners sugar, sifted

Directions:

Heat oven to 350 degrees.

Butter and flour two 9-inch cake pans. In large mixer bowl, cream butter and sugar until light and fluffy. Add eggs, one at time; beat well. Add mangoes and mango juice. Beat until light and fluffy. Add eggs, one at a time; beat well. Add mangoes and mango juice. Beat until combined. In another bowl, combine flour and dry ingredients. Add to creamed butter mixture and mix well. Stir in cherries and pecans. Divide batter between the two cake pans.

Bake until wooden pick inserted in center comes out clean, 35 to 40 minutes. Remove cakes from oven; let cool 10 minutes. Loosen edges of cake and invert onto cooling racks. Cool completely.

In small saucepan, heat cream and cherries over medium heat until cherries are very soft, about 3 minutes. Cool mixture 5 minutes. Stir in vanilla and rum. Cool in refrigerator about 15 minutes.

In large mixer bowl, cream butter and cream cheese until light. Beat in cooled cherry mixture. Gradually beat in sugar until creamy. Place one layer of cake on serving plate. Spread with frosting. Top with second cake layer and frost tip and sides of cake.

Yield: 1 (9-inch) layer cake.

Carrot Cake with Cream Cheese Frosting.

1 Cup of vegtable oil.

3/4 Cup caster sugar.

2 tablespoons golden syrup.

2 eggs lightly beaten egg.

2 cups coursely grated carrot.

3/4 cup chopped walnuts.

1 1/2 cups S.R. flour.

1/2 teaspoon bicarbonateof soda.

1/2 teaspoon ground nutmeg.

1/2 teaspoon ground cinnamon.

Grease a 15cm x 25cm loaf pan, line base with baking paper.

Combine oil, syrup, eggs, carrot, nuts and sifted dry ingredients in large bowl; stir well. Pour mixture into prepared pan.

Bake in moderate oven 1 hour. Stand cake 5 mins before turning on to wire rack.

Spread cold cake with cream cheese frosting as follows.

Cream Cheese Frosting.

Beat 125 grams packaged cream cheese, 30 grams soft butter, 1 teasoon of lemon rind (i use lemon juice out of the bottle) beat with electric mixer then gradually add icing mixture.

The frosting on this is deeeeeelicious.

Here's the recipe I use: use buttermilk in place of the water. Mash 2 over ripe bananas and mix into the batter. Bake according to package instructions.

Ingredients

  • 3/4 cup shortening
  • 2 cups brown sugar
  • 3 eggs
  • 2 1/2 cups flour
  • 1/3 cup buttermilk
  • 1 1/2 tsp. soda
  • 4 bananas, mashed
  • pecans, chopped (opt.)
Icing:
  • 1 package cream cheese (8 oz.)
  • 1/2 cup butter
  • 1 (1 lb.) package powdered sugar
  • 2 tsp. vanilla

Directions

Mix ingredients in order listed. Bake in 3 greased and floured 8 inch pans at 325 degrees F for 45 minutes. Or bake a little longer in a flat sheet pan. When icing, sprinkle pecans on top of each layer of icing.

For Icing: Combine all ingredients and ice cooled cake.

Sharyl, my kid's favorite banana cake is made from a regular white or yellow cake mix, add l/2 tsp. baking soda, and two ripe bananas. Bake as usual. This was on the back of a cake mix years ago and I have been making it for years. It makes a very moist banana cake. I usually frost it with either a caramel frosting or creme cheese frosting. Banana Cake

Grease and flour 2- 8 or 9 inch cake pans. Stir together flour, sugar, baking powder, baking soda, and salt. Add bananas, buttermilk or sour milk, shortening, and vanilla. Beat on low till combined. Add eggs, beat on medium 2 minutes. Pour into pans.

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Put 1 tablespoon lemon juice in a measuring cup with 2/3 cup milk. Set aside. Increase speed to medium and beat for 2 more minutes. Pour the batter into the prepared pan. Bake at 350 degrees F (175 degrees C) for 33 to 36 minutes or until a toothpick inserted near the center comes out clean. Let cake cool then frost with your choice of frosting, if desired.
