Ingredients
- 1 tsp. instant minced onion
- 1 tsp. salt
- 1/8 tsp. ground pepper
- 1/2 head cabbage, cut into wedges and cored
- 2 large carrots, peeled and quartered
- 1 can whole white potatoes, drained
- 1 can corned beef, chilled and sliced
Directions
In a large skillet, combine onion, salt, pepper, cabbage, and carrots. Heat to boiling; reduce heat and boil gently for 15 minutes. Add potatoes, and corned beef. Return to boiling and simmer for 5 minutes longer or until cabbage is tender. On platter, alternate cabbage and corned beef; surround with carrot and potatoes. Sprinkle with chopped parsley. Serves 4.
