Savory Vegetable Beef Soup

My friend sent this recipe to try during our not normal extreme cold weather. It was delicious and a recipe that I'll make often during winter's cold.

Ingredients

  • 1-3/4 cups beef broth
  • 2 medium potatoes, cut into chunks
  • 1 cup cubed cooked beef
  • 3 cups vegetable juice (I used V8)
  • 1 can (approx. 8 oz.) cut or diced tomatoes
  • 1 bag (16 oz.) frozen mixed vegetables
  • 1/4 tsp. dried thyme leaves, crushed
  • 1/8 tsp. ground black pepper

Directions

Put broth and potatoes in saucepan. Heat to a boil. Cover and cook over low heat for 5 minutes, or until potatoes are tender. Add the beef, vegetable juice, tomatoes, vegetables, thyme and black pepper. Cover and cook 15 minutes or until vegetables are tender.

Serves: 6
