Savory Vegetable Beef Soup
My friend sent this recipe to try during our abnormally cold weather. It was delicious and a recipe that I'll make often during winter's cold.
- 1-3/4 cups beef broth
- 2 medium potatoes, cut into chunks
- 1 cup cubed cooked beef
- 3 cups vegetable juice (I used V8)
- 1 can (approx. 8 oz.) cut or diced tomatoes
- 1 bag (16 oz.) frozen mixed vegetables
- 1/4 tsp. dried thyme leaves, crushed
- 1/8 tsp. ground black pepper
Put broth and potatoes in saucepan. Heat to a boil. Cover and cook over low heat for 5 minutes, or until potatoes are tender. Add the beef, vegetable juice, tomatoes, vegetables, thyme and black pepper. Cover and cook 15 minutes or until vegetables are tender.
