Crunchy Potato Balls

Ingredients

  • 2 cups stiffly mashed potatoes
  • 2 cups finely chopped fully cooked ham (or sausage)
  • 1 cup shredded cheddar or Swiss cheese
  • 1/3 cup mayo
  • 1 beaten egg
  • 1 tsp. prepared mustard
  • 1/4 tsp. pepper
  • 2 to 4 Tbsp. all purpose flour
  • 1 3/4 cup crushed cornflakes

Directions

In a bowl, combine first 7 ingredients well. Add enough flour to make a stiff mixture. Chill for 30 minutes. Roll into 1 inch balls and roll in flakes. Bake at 350 degrees F for 25-30 minutes. Serve hot. Makes about 6 dozen.

Potato Balls

Love the onion soup mix in this recipe!

Ingredients:

  • 2 lbs. mashed potatoes
  • 1/2 cup grated Parmesan cheese
  • 1 (3 oz.) pkg. cream cheese
  • 2 Tbsp. margarine
  • 1 pkg. dry onion soup mix
  • dash pepper
  • 1 Tbsp. chopped onion
  • 2 eggs
  • 3 cups crushed corn flakes

Directions:

Mix first 7 ingredients well. Add a little milk if too stiff. Shape into 16 balls. Dip into beaten egg. Roll in corn flakes. Bake at 400 degrees F for 10-15 minutes or until hot and crisp. Can be frozen until ready to use.

Servings: 8
Prep Time: 15-20 Minutes
Cooking Time: 10-15 Minutes
