Southern Hot Cheesy Garlic Grits

A bit too hot for me, but those who like spicy dishes love this!

Ingredients:

  • 1 cup white quick cooking grits
  • 4 cups boiling water
  • 1/2 tsp. salt
  • 1 1/2 cup shredded mild cheddar cheese
  • 1/2 cup butter
  • 1/2 cup milk
  • 2 eggs, well beaten
  • 1 sm. clove garlic, minced
  • 1/2 cup chopped black olives
  • 1/2 cup chopped jalapeno peppers

Directions:

Stir grits into salted boiling water in heavy saucepan gradually. Return to a boil; reduce heat. Cook for 2 1/2-5 minutes or until thickened, stirring occasionally. Stir in cheese, butter, milk, eggs, garlic, olives and peppers. Cook over low heat until cheese is melted. Pour into greased 2 qt. casserole. Bake for 1 hour at 350 degrees F.

Thanks Robin, this looks like someting I would love. I bet substituting shrimp for the black olives would be good also.
