Crock Pot Chicken and Rice Casserole

Ingredients

  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 1 soup can of water or milk
  • 4 Tbsp. butter
  • 1 envelope onion soup mix
  • 1 1/2 cups white rice, uncooked
  • 4 lbs. chicken breast, skinless
  • paprika

Directions

Coat a 4 qt. crock pot with cooking spray. In a saucepan, combine the cream of mushroom soup, cream of chicken soup, cream of celery soup, water, butter and 1 Tbsp. of the onion soup mix. Cook, over medium heat, until the butter has melted. Place the uncooked rice in the bottom of the crock pot and pour 2/3 of the soup mixture over the rice. Stir well and place the chicken on top of the rice and soup. Pour the remaining soup mixture on top. Sprinkle with the paprika. Cover and cook on low for 6 hours. (After 2 hours, remove the cover and stir well. Otherwise, do not remove the cover during cooking, unless necessary.

Yes, you can use frozen chicken, I've done it and it turns out wonderfully. Good Luck! Cathy

This sounds really good. I wonder if I could put the chicken in there still frozen? Love to have this for dinner but chicken in still frozen. Anybody have any suggestions. I've seen people say you can put the roast in there still frozen so wonder, if it'd be ok for the chicken as well.
