Vegetable Meatloaf

Different and very tasty from the traditional tomato or ketchup meatloaf.

Ingredients:

  • 2 lb. hamburger
  • 1 small onion, grated or chopped very small
  • 1 large potato, peeled and crated
  • 1 or 2 carrots, grated
  • 1 box of cornbread stuffing mix
  • 2 eggs
  • 1/2 cup milk
  • 1 can cream of mushroom soup
  • salt to taste

Directions:

Mix hamburger, grated vegetables and salt, add stuffing with seasoning mix, eggs, milk and 1/2 can of mushroom soup, saving the other half. Mix well then form into loaf in pan. top with the remaining mushroom soup. Bake for approx. 1 hour at 350 degrees F .

Vegetable Meatloaf

This is not your typical dry meatloaf. It is moist and the hamburger is yummy and the vegetables add a nice change.

Ingredients:

  • hamburger
  • potatoes
  • canned corn
  • canned green beans
  • Worchester sauce
  • onions
  • Parmesan

Directions:

Brown hamburger with diced onions, add Worchester sauce, drain.

Make mashed potatoes. I add Parmesan.

Layer corn and green beans (I leave some of the liquid from the green beans in) with meat and mash potatoes. Dot top with slab of butter and sprinkle with paprika.

Bake for 20 - 30 minutes at 350 degrees F.

Cooking Time: 20-30 Minutes
