I am looking for easy meals made with hamburger.

Bubba's Sloppy Joe Casserole

Ingredients:

1 lb ground chuck
1 tbl spoon olive oil
2 packs McCormick Sloppy Joe Season
Pack of American cheese Slices
1 Can of biscuits (12 count)

Instructions:

Pour oil in to skillet.
Brown meat in oil.
Add Sloppy Joe seasoning.
Follow directions on package.
Transfer Sloppy Joe to Casserole dish.
Completely cover Sloppy Joe with individual slices of cheese.
Place biscuits on cheese.
Cook in oven per biscuit directions.

I make a quick picadillo! In fry pan add some cooking oil, chop potatoes into little cubes. Brown your beef as you cook potatoes, then you roll up into flour tortillas. You can add salsa, I do, and others like to add cheese to it. It is easy quick dinner and everyone seems to really enjoy.

One of our favorites is Beefy Taco Joes. Brown 1 lb ground beef, drain off fat, then add 1 10-oz can of tomato soup and 1 c. Pace or other salsa. Simmer to blend flavors. Spoon onto bottom half of a hamburger bun, top with a piece of sliced cheese, and add the top bun half.

Fry hamburger with thinly sliced celery and onion until browned, drain if needed. Add water to cover and beef boullion to taste, boil a few minutes. Use water and cornstarch, mix in a cup pour slowly into hamburger mixture until the thickness you want. Can add soya sauce, cook until bubbly and serve over rice, chow mein noodles, mashed potatoes. Taste good with what ever you have. My own recipe.

I make meatballs or meatloaf this way:

To 1lb of ground beef
add 1/4 cup sweet chili sauce
1 egg
1/4 cup water
dashes of salt, pepper, and garlic powder

This makes a very loose and wet consistency, don't worry about it. It comes out juicy and delicious.
If you have a grill pan, it helps with liquid run off.
Mix 50/50 ketchup and BBQ sauce and spoon on top before cooking/baking.
Delicious with mashed potatoes or mac & cheese or rice.

Asian Skillet

Saute ground beef with garlic and onions and cabbage and add one ramen seasoning packet with some soy sauce and brown sugar to taste. Separately boil the ramen noodles and drain and then saute them in a little oil and the soy sauce brown sugar mixture. Mix noodles with ground beef and cabbage mixture.

Of course there's the old stand by's of spaghetti, tacos, chili, etc. A good website to check out is hillbillyhousewife.com

Debbie's Skillet Meat Loaf With Gravy

1 pound ground chuck
1 egg, slightly beaten
1 small onion, diced fine
1/2 cup seasoned bread crumbs
1/2 cup oatmeal
2 dashes Worcestershire sauce
1/4 cup ketchup (or a bit less)
1 squirt prepared mustard
1 10 1/4 oz Campbell's Beef Gravy

Mix all ingredients except gravy. Form into 7 or so round patties and brown real well on both sides in large skillet. (can add shortening if needed) Once they are nicely browned on both sides, drain grease. Add gravy over tops of patties, cover and simmer for 20 minutes.

Basically I took my meat loaf recipe and made stove top. Not only is it quicker but it doesn't heat up the kitchen then, not having to turn on the oven! The gravy gets even tastier when it is simmering along with the patties. We like mashed potatoes and peas with it. Yum!

Possible variations: could use crushed crackers or even torn up bread, chili sauce, steak sauce. Add some sauteed mushrooms to the gravy, even fried onions. Might try flouring the patties before frying or coating with some more bread crumbs. Could add some diced green pepper. Many possibilities.

Mix beef w/onion soup mix,bread crumbs or anything for a basic meatloaf-form into oval patties and brown on each side-put in casserole dish. in saucepan mix 1 or 2 cans brown gravy and 1 or 2 cans golden mushroom soup (campbell's, not regular mushroom soup, the golden is more like gravy) use equal cans of each. pour over patties bake @350 or 400 F.until bubbly and done in the center and you have Salisbury steak. The gravy is great over rice or mashed potatoes!

Patty the hamburger out and cook it. When its done take it out and put a can of cream of mushroom soup in with a little bit of water mix up and put your patties back in and like it simmer fir about 20 minutes. It's really good and easy.

My dad loves hamburger, anything hamburger. We're getting a bit tired of hamburgers, chili, stuffed peppers, etc. Anymore suggestions?

Louisiana meat pies. Just season your meat really good with Tony's and brown, drain really well, then saute' onion, bell pepper, celery, and garlic in a little water. Then mix and let simmer with a few bullion cubes and a little water. (make meat well ahead of time and let cool)

Pie pastry:

  • 3 cups all purpose flour
  • 1 1/2 teaspoon salt
  • 3/4 teaspoon baking powder
  • 6 tablespoon vegetable shortening
  • 1 large egg
  • 3/4 cup milk
  • Mix well, but not too long.
  • Roll out 12 circles on floured surface.
  • Put meat on one side and fold in half and crimp edges with a fork to seal good.
  • Deep fry at 360 degrees til golden brown.
  • While still hot sprinkle with Tony's.
  • Serve with Tabasco and ketchup.

This is quite easy and quite good, I don't go by a recipe I just wing it, you can change the amounts to your liking.

Onion Burgers in Gravy

  • 1 1/2 lbs. ground beef 2 Tbsp. Worcestershire sauce
  • 1/4 cup ketchup or barbecue sauce
  • Heinz Fat Free Beef Gravy in a jar

Mix all ingredients except the gravy. Form into large patties. Fry. When done, remove burgers from pan and pour off grease. Add the gravy to the pan, stir to get the residue from the pan mixed into the gravy. Return burgers to pan, cover and let simmer about a half hour, turning patties half way through. (you can broil your burgers if you don't like fried) (04/18/2009)

What about tacos, spaghetti, Sloppy Joes, shepherd's pie, or meatloaf? I don't really go by recipes for those. Here is one my husband likes. This one is made from basic pantry staples.

Country Style Skillet Dinner

  • 2 Tbsp. butter
  • 1 lb. ground beef
  • 2 cups medium noodles
  • 1 15 oz. can tomato sauce
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/4 tsp. pepper
  • 4 oz. shredded Swiss cheese (I normally use cheddar, because I always have that on hand.)
Cook meat in hot butter until browned. Stir in uncooked noodles, tomato sauce, salt, sugar and pepper. Cook, covered on low heat 20 minutes or until noodles are tender. Sprinkle with cheese; heat covered until cheese melts.

I haven't made this one in a while so I don't remember, but you might need to watch and add some water during the noodle cooking time.

I make hamburger pie. I fry the hamburger then drain and make mashed potatoes, then I put the hamburger in casserole dish. I then add a can of corn or any vegetables you like on top then spread the mashed potatoes on it and sprinkle with shredded cheese and seasoning. Bake at 350 until nice and hot all the way through and cheese is melted. My family loves it. (04/19/2009)

Mushroom meatballs have been a family favorite at my house for years.

Mushroom Meatballs

  • 1 to 1 1/2 lbs. hamburger
  • 1 egg
  • 1/4 box saltine crackers, crushed
  • 1 finely chopped onion
  • 1 tsp. salt
  • 1 can cream mushroom soup
  • 1 soup can water

Mix all, but soup and water. Shape into meatballs, put in single layer in 9 X 13 inch pan. Stir soup and water together. Pour over meatballs, cover and bake 350 degrees for 1 hour. The sauce can be used as gravy over mashed potatoes or over rice.

My mother-in-law makes this Mexican cornbread, the whole clan loves it.

Mexican Cornbread

  • 1 lb. ground beef
  • 1 large onion, chopped
  • 4 slices Longhorn sharp cheddar cheese
  • 1 C. yellow cornmeal
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 C. cooking oil
  • 1 C. milk
  • 2 eggs, slightly beaten
  • 1 can cream style corn
  • 3 to 5 jalapeno peppers, chopped fine

Preheat oven to 350 degrees. Mix cornmeal, baking soda, and salt. Add milk, eggs, corn, peppers, and oil. Pour half in pan, then add in layers; beef, onion, cheese. Add remaining cornmeal mixture and bake 45 minutes. (This recipe does not specify what size pan to use.)

Top any meatloaf with this and you have something special, very good.

Meatloaf Topping

  • 1/4 C. ketchup
  • 2 Tbsp. brown sugar
  • 1 teaspoon dry mustard

Stir together and spread on any meatloaf 10 minutes before meatloaf is finished baking. Bake uncovered 10 minutes.

I don't know whether or not she knew what she was talking about, but many moons ago a friend gave me this recipe and said it was a Girl Scout campfire recipe. Sounds strange, but tastes good.

Girl Scout Recipe

  • 1 lb. hamburger
  • 1 chopped onion
  • 1 chopped green pepper
  • 1 can pork and beans
  • bread

Cook the hamburger, onion, and green pepper until browned. Drain. Stir in the beans and serve over slices of bread. (04/21/2009)

A very simple recipe is to lightly brown a pound of ground beef with an onion that is sliced thinly. Peel and slice 4 potatoes. Place a layer of beef, a layer of potatoes then 1/2 can of cream soup (mushroom, celery, cheddar). Repeat the layers. Cover with foil and bake at 350 for 1 hour. A quick version is to cook noodles and substitute them for the potatoes, then you only need to bake for 30 minutes.

A second favorite is to brown a pound of ground beef. Into a large pot add the beef, one onion diced, a can of corn, carrots, green beans (all drained first), 8 oz. of cooked pasta, and a jar of spaghetti sauce. Bake at 350 until heated through, about 30 minutes. Sprinkle on cheese and return to the oven until the cheese melts. What I do is save all my leftover veggies and freeze them and when I get the equivalent of about 5-6 cans of veggies I thaw and drain them and make the casserole. The only veggies that really don't work are like beets and sauerkraut. (04/22/2009)

Baked Taco Sandwich: Who says tacos have to be served in a taco shell? These tacos are like open-face sandwiches you eat with a fork. And you probably have all the ingredients you need on hand.

  • 1 pound lean ground beef
  • 1 envelope (1.25 ounces) Old El Paso taco seasoning mix
  • 1 cup original Bisquick mix
  • 1/3 cup cold water
  • 3/4 cup shredded Cheddar cheese (3 ounces)
  • sour cream, if desired
  • shredded lettuce, if desired
  • chopped tomato, if desired
  1. Heat oven to 450 degrees F. Grease square pan, 8x8x2 inches. Cook beef and taco seasoning mix as directed on envelope of seasoning mix.
  2. Mix Bisquick mix and cold water until soft dough forms; spread in pan. Spread beef mixture over dough.
  3. Bake uncovered 25 to 30 minutes or until edges are golden brown and toothpick inserted in center comes out clean. Immediately sprinkle with cheese. Let stand 1 to 2 minutes or until cheese is melted. Serve with remaining ingredients. (04/22/2009)

Beef and Spinach Lasagna Roll-Ups
Prep Time: 35 minutes, Start to Finish: 1 hr 15 min
Makes: 2 servings Nutrition Information

Dinner for two? There's no need to make a whole pan of lasagna.

  • 1/4 lb extra lean ground beef
  • 3 tablespoons chopped onion
  • 1 jar (14-oz.) tomato pasta sauce
  • 1 egg white
  • 1/2 cup ricotta cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried oregano leaves
  • 3/4 cup shredded mozzarella cheese (3 oz)
  • 4 (8x2 1/2-inch) frozen precooked lasagna noodles, thawed
  • 1 cup fresh baby spinach leaves, washed, stems removed
  1. Heat oven to 350 F. In 8-inch skillet, cook beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently; drain. Stir in 1/2 cup of the pasta sauce. Remove from heat.
  2. In bottom of ungreased 8-inch square (2-quart) glass baking dish, spread 3 tablespoons of the remaining pasta sauce. In medium bowl, beat egg white. Stir in ricotta cheese, Parmesan cheese, oregano and 1/2 cup of the mozzarella cheese.
  3. Spread 1/4 each of ricotta mixture, spinach leaves and beef mixture over each lasagna noodle. Starting with short side, gently and loosely roll each noodle; place seam side down over sauce in baking dish. Top roll-ups with remaining sauce. Cover with foil.
  4. Bake 30 to 40 minutes or until bubbly and thoroughly heated. Remove foil; sprinkle with remaining 1/4 cup mozzarella cheese. Bake an additional 2 to 4 minutes or until cheese is melted. Let stand 5 minutes before serving.

Beef Patties in Onion Gravy
Patties
  • 1lb. ground beef
  • 1 egg
  • 1/2 cup dry bread crumbs
  • 1/2 envelope dry onion soup mix
  • 1 tsp. Worcestershire sauce
  • 1/8 tsp. pepper

Gravy

  • 1/2 envelope dry onion soup mix
  • 2 cup water, divided
  • 2 tbs. flour

Combine all patty ingredients;mix thoroughly with your hands and shape into 4 patties. Brown patties on both sides. Brown only. Remove any grease. Mix dry onion soup mix and 1 1/2 cup water, pour over patties. Cover pan and simmer for 20 minutes, very low boil. Remove patties to a plate. Combine 1/2 cup water with 2 tbs. flour, add to pan. Stir constantly with a whisk until it comes to a boil. Boil 1 minute. Return patties to pan, serve or turn pan down to simmer. (04/22/2009)

This is Chili Nacho Bake.
  • 1 pound extra lean ground beef
  • 1 tsp. Olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, red or green, chopped
  • 2 cloves garlic, minced
  • 2 cans (15oz) each of pinto beans, drained
  • 2 cans (14.5oz) each of zesty, chili style tomatoes
  • 2 tsp. chili powder
  • 1/2 tsp. cumin
  • 4-6 oz tortilla chips
  • 2 cups shredded Cheddar cheese

Heat oven to 350. Grease a 2-1/3 - 3 quart casserole. In a large skillet over medium heat, brown the ground beef in olive oil with the onions until the onions are lightly browned and the ground beef is no longer pink. Add the bell pepper and garlic and continue cooking, stirring for about 2-3 minutes until bell bell pepper is tender. Add pinto beans, tomatoes, chili powder and cumin. Cook, stirring, until hot and bubbly. Break tortilla chips into smaller pieces and put half of them in the bottom of the casserole. Spoon about half of the bean and beef mixture over the chips and sprinkle half of the cheese. Spoon the remaining bean and beef mixture over the cheese layer. Top with remaining chips and cheese. Bake for about 25 minutes or until bubbly and cheese has melted. Serves 6-8. (04/23/2009)

Easy Enchilada Casserole in this same newsletter. You could leave out the beans and double the meat. Still it is good. Today we had a second meal from it, topped with Mozzarella. Another thing to try is a box of Rice a Roni in layers with the beef, and I like it with a can of green beans mixed in. Good luck.
