Does anyone have any recipes for ground meat, besides hamburgers, spaghetti, or meatloaf? I want to try something new.

Have you tried casseroles? This is something I throw together when I'm busy and don't want to stand over the stove in the evening. If I have a project I'm going to be working on, I prepare this in the morning, put it in the fridge and pop it in the oven for supper.
Brown hamburger with chopped onion.
Make a box off Mac and Cheese.
Add hamburger mixer to the prepared Mac and Cheese.
Add a can of cream of anything, chicken or mushroom soup, what ever you have on hand.
Add how ever many slices of cheese you want.
I add a little canned stewed tomatoes, only I make sure the tomatoes are good and smooshed.
Add some salt and pepper (I usually add that to the meat as it's browning)
Spray a casserole dish, pour in the mixture. Cube up any stale bread you have, spread the cubes over the mixture, melt some butter and pour it over the bread. Bake at 350 until it's bubbly and the bread and butter has browned.
When I was growing up, we didn't have large freezer bags so we froze our hamburger in a lump wrapped in foil. When we would forget to thaw it out for dinner that night, we would have a boiled dinner. Bring a large pot of seasoned water to a boil. Drop in the frozen hamburger and then some potatoes, onions, and carrots. Bring back to a boil and turn down to a slow boil. When the lump of hamburger looks like the outside is cooked, poke it with a large meat fork occasionally being careful not to break up the lump.
When the veggies are tender and the juices run clear when the hamburger is pierced, the hamburger is done.
Gently remove the hamburger and veggies. Add more water if needed, bring back to a boil and drop a box of spaghetti into the pot. Cook until tender. The hamburger will slice like a meatloaf. I like to add a little Worcestershire sauce or steak sauce to my slice of meat.
We also made chili veggie soup with hamburger. Brown the hamburger and make the soup like normal. Add a chili roll and very small head of chopped cabbage. Very comforting on a cold, winter evening. Good luck.
How about Salisbury Steak? It's one of my family's favorites.
I serve it with mashed potatoes because a nice sauce remains from the golden mushroom soup in the pan. I use very lean beef, so the sauce isn't greasy. Add a side of corn or coleslaw - delish!
This is a link to the one I make, however, there are many, many versions from baked to broiled.
Brown around a pound of ground beef, drain, add a small pack of frozen peas (preferable to defrost them first), a can of mushrooms, and a small can of tomato sauce, mix well, cover, reduce heat, and cook for 15 mins. Serve over rice or in pita bread.
This is very simple and very good. Brown one lb. of ground beef with a chopped onion and then drain the fat. Add some chopped garlic and soy sauce and stir. Add a tablespoon or so of cornstarch to a cup or two of cold water, stir until there are no lumps and add it to the meat. When the sauce thickens, it is done. Serve with mashed potatoes.
Taco Hash Browns:
1 lb hamburger browned and drained
1 packet taco seasoning added to browned hamburger along with water
I don't let the water completely evaporate from the meat mixture. I start the hash browns cooking in the oven right before I start the hamburger to browning. When hamburger is done and has seasoning added, the hash browns are done. Kinda smash up hash browns in big bowl, dump in the cheese, and then the meat mixture. I don't let the water evaporate so that it can soak into the potatoes. Mix well. Put in bowls then you can add in whatever you want. I like sour cream, but my husband and son go all out and put in sour cream, salsa, jalapenos and whatever else you can find.
1-2 lbs ground beef
2 onions quartered & sliced
2 small cans tomato soup
Cook pasta & drain. Brown ground beef & onion with fave seasonings & drain. Mix ground beef, pasta & soup all together.
This is the only spaghetti I knew when growing up. It's very NUMMY.
NOTE: If can't find this pasta I use the macaroni from 2 boxes of any mac n cheese. Save the cheese packet for another dish.

One of my favorites & so easy.
Brown 1 lb. chopped meat with 1/2 chopped onion, drain fat. Add 1/2 envelope taco seasoning mix & 1/2 cup salsa. Spread in 8x8 baking dish. Cover with 1 can drained pinto beans. Sprinkle 1-1/2 cup shredded Mexican cheese over all.
Mix up 1 box corn bread mix according to directions. Spread over cheese. Bake 25 min. 350 degrees. Serve with sour cream & additional salsa. Makes 4 to 6 servings.
Stuffed anything - peppers, squash, eggplant, macaroni shells or manicotti. Works great in casseroles. Stroganoff, beef and noodles, SOS (hamburger gravy over toast with eggs, etc), salisbury steak, (I even tried "chicken fried steak, but that is another story). Meatballs, tacos, burritos. Oh my! Just some thoughts for a start. Oh, yeah, don't forget veggie beef soup!
I have a large family so this recipe feeds 6-8 & tastes like Salisbury Steak. Recipe can easily be made in half &/or leftovers can be frozen - my favorite trick for sometimes getting out of cooking.
You will need a blender or food processor, a large bowl for mixing, foil for covering top of baking dish, a saucepan for mixing the gravy, & a deep-sided baking dish large enough to hold 6 to 8-8 oz. patties and gravy. I usually use my roasting pan.
4 lbs. hamburger meat
1 pkg. saltines
2, 2 c. packages brown gravy mix or 4, 1 c. pkgs.
2 sm. cans mushroom stems & pieces, drained well, optional
3 stalks celery, wash & trim ends but leave the leaves on
1 medium-sized onion, peeled & cut into pieces
1 T. beef bouillon flavoring
2 t. black pepper
short 1/2 t. garlic powder
Put the raw meat into the large bowl, breaking into pieces. In the blender or processor cup, add about 1/4 of the crackers at a time & whirl into a powder; add the powdered crackers to the meat. Next, cut the celery into about 3-inch pieces; add to blender cup. Cut the onion into chunks & also add to blender cup. Add all remaining ingredients except for the brown gravy mix & optional mushrooms: whirl until smooth. Pour the vegetable mixture over the hamburger & crackers & thoroughly mix together - using your hands works best. Divide mixture as evenly as possible into 6 to 8 patties. Place on pre-heated, broiler pan & broil each side at the lowest position for 10 minutes on each side. While the meat is broiling, prepare your gravy mix using only 3 c. of water instead of the usual 4 c. you would normally make it with. Bring to a boil, then lower temperature & allow to simmer for a few minutes. At this point, you can add the optional mushrooms. Just before the hamburger patties are finished, pour about 1/4 of the brown gravy into the baking dish. When patties are done, use a spatula to remove them from the broiler pan & place ontop of the gravy in the baking dish. Pour remaining gravy over the top of the hamburger patties, cover with foil & bake at 350 degrees F for 45 minutes.
I know this sounds complicated but it really isn't. The beauty of it all is that you can put the cooled down patties & gravy in ziplock freezer bags to lay flat in the freezer. Our family has grown up & moved away but I still make the same amount, leave out 2 for dinner that night & freeze the rest so I won't have to cook later... Enjoy!
I brown a pound of ground beef and then put in two cans of chicken gumbo. Let it cook for about 15 minutes and it makes a pretty good quick meal.
