- Fresh rhubarb, sliced
- 1 egg
- 1/2 cup sugar
- 1 cup flour
- 1 Tbsp. butter
- 1/2 cup milk
- 1 tsp. baking powder
- sugar and cinnamon
Slice enough rhubarb to cover bottom of a greased baking dish. Mix rest of ingredients to make cake. Pour over rhubarb. Sprinkle with sugar and cinnamon, if desired. Bake at 350 degrees F for 30-45 minutes.
