Butterscotch Biscuits

Ingredients

  • 2 cups sifted flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup + 1/3 cup margarine or butter
  • 1 egg
  • 1/4 cup milk
  • 1 tsp. vanilla
  • 1 cup dark brown sugar, firmly packed

Directions

Sift together flour, baking powder and salt into a mixing bowl. With pastry blender cut in 1/2 cup firm butter. Beat egg slightly, add milk and vanilla and beat to combine. Stir into flour mixture. Roll out dough thinly on lightly floured board. Spread with 1/2 cup soft butter and sprinkle with brown sugar. Roll up and cut into 12 slices. Place each into a buttered muffin pan. Bake in a hot 400 degree F oven, 15-20 minutes. Serve hot or cold.
