I have a delicious strawberry pie recipe. for the crust cut 1 stick softened butter into 1 1/4 cups flour. Press into pie pan or baking dish. Bake at 350 for 15 minutes, then let cool. For the filling; place 3/4 cup sugar, 2 tbs clear Karo syrup, 3 1/2 Tbs cornstarch and 1 cup water in sauce pan. Cook until thick and clear, stiring often. Add 2 Tbs strawberry jello (or 2 tsps if using sugar free). mix well and let cool. Add 1 quart sliced strawberries then pour into cooled crust. Chill and top with cool whip. Enjoy.

I don't know if this is what you are looking for -- the only cornstarch is in the Jell-O -- but this is quick and no bake, great for a hot day!

2 graham cracker crusts
fresh strawberries
1 small box strawberry Jell-O

Put strawberries in crust. Make Jell-O according to package directions. Pour Jell-O into crusts. Refrigerate overnight. Serve with whipped cream or vanilla or strawberry ice cream. Each pie makes 6 to 8 servings.

I learned this in home ec 40 years ago and I'm still using it. It is so simple and good -- it never fails to impress! You can make this with almost any fruit(fresh, frozen, or canned).

The following recipe came from this site: http://southernfood.about.com/od/strawberrypierecipes/r/bl80613i.htm

1 package strawberry flavored gelatin, 4-serving size
2 cups water
4 pints strawberries, hulled
2 9-inch baked pie shells, cooled

Cook sugar, cornstarch, jello and water until thick; cool. Place whole berries in the baked pie shells. Pour sauce over berries and refrigerate until thoroughly chilled.

Serve with lightly sweetened whipped cream or whipped topping.
