Bacon Mixed Vegetable Salad

Ingredients

  • 1 small head cauliflower, cut up
  • 3 stalks broccoli, chopped
  • 1/2 cup red onion, diced
  • 1 cup celery, cut up
  • 1 cup grated carrots
  • 1 package Cheddar cheese (8oz)
  • 1 lb. bacon, fried and crumbled
  • 2 cups Miracle Whip salad dressing
  • 1/2 cup sugar
  • 2 Tbsp. vinegar
  • Parmesan cheese, opt.

Directions

Mix together all cut vegetables, cheese and bacon. Mix salad dressing, sugar and vinegar. Pour over vegetables and toss. Sprinkle with Parmesan cheese.

I love this salad. I have had a similar version of it before. Thanks for the recipe...I will definately give it a try.
