Nut-Crusted Pineapple Bread
- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 1 tsp. orange peel
- 2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 can crushed pineapple (8 oz.)
- 1/3 cup sour cream
- 3 Tbsp. sliced almonds
Cream together butter, sugar, and egg until light and fluffy. Blend in orange peel. Sift together flour, baking powder, salt, and baking soda. Add undrained pineapple and sour cream and mix by hand just until all of the flour is moistened. Sprinkle almonds into bottom and sides of heavily greased 9x5 inch loaf pan. Pour batter. Bake at 350 degrees F for 60-65 minutes. Let stand in pan 10 minutes before turning out on rack to cool.

Left out the amount of flour in the recipe.
