- 3 Tbsp. brown sugar
- 2 Tbsp. butter
- 1/4 tsp. salt
- 4 cup coarsely shredded carrots
- 1 cup flaked or shredded coconut
- 6 Tbsp. water
Melt butter in a 1 1/2 quart casserole on medium high power for 30 seconds. Stir in brown sugar and salt. Add carrots, coconut and water; mix well. Cover and microwave on high for 6-9 minutes.
