Coconut Ice Cream Cake

Ingredients

  • 1 baked angel food cake
  • 1 cup sugar
  • 1 1/2 cups milk
  • 1 tsp. salt
  • 1 Tbsp. flour
  • 3 egg yolks
  • 1 Tbsp. gelatin
  • water
  • 1 tsp. vanilla
  • 1 pint whipping cream
  • coconut

Directions

Boil 1 cup sugar, 1 1/2 cup milk, 1 tsp. salt and 1 Tbsp. flour. Beat slightly 3 egg yolks. Add to above slowly. Soak 1 Tbsp. gelatin in 1/4 cup water and add to above. When cool, add 1 tsp. vanilla and 1 pint whipping cream. Cut angel food cake into 3 parts. Cover between layers and top and sides with the whipped cream mixture and put on coconut all over the cake. Freeze if possible. Otherwise, leave in refrigerator several hours before using. If you freeze it, thaw just enough to be able to cut it. Delicious for birthday desserts.

This is a awesome cake and easy to make.

Tre Leche Coconut Cake

1 Package White Cake Mix - bake according to directions for a 9 x 12 cake pan.

While the cake is still warm - poke holes with a large
fork in the whole cake. Mix a can of Coconut Milk and a Can of Condensed Milk and pour over the warm cake. Let the cake cool.

Frost with Cool Whip and top with shredded coconut.

Keep in the refrigerator. Enjoy
