Golden Corn Fritters

Ingredients

  • 1 egg, beaten
  • 2-3 Tbsp. milk
  • 1/4 cup flour
  • 1/2 tsp. salt
  • 1 cup fresh or frozen corn
  • Shortening or cooking oil for deep fat frying

Directions

Combine egg and 2 Tbsp. milk. Stir in flour and salt. Stir in corn and enough remaining milk to make a fairly thin batter. Heat 2 inches of oil to 365 degrees F in a heavy pan of deep fat fryer. Drop batter by tablespoons, 3 or 5 at a time, into hot oil. Cook 3-4 minutes or until golden brown. Turn once. Drain on paper towels. Keep fritters warm in 200 degree F oven. Serve warm with maple syrup. Makes about 10 fritters.
