Zucchini Pie

Ingredients:

  • 3 1/2 cups zucchini
  • 3 Tbsp. RealLemon Lemon Juice
  • 4 Tbsp. flour
  • 1 1/2 cups sugar
  • 1 tsp. cinnamon
  • 1/8 tsp. salt

Directions:

Peel, seed and thinly sliced zucchini. Sprinkle RealLemon over slices and stir well. Let stand. Mix dry ingredients. Add to zucchini and mix well. Put in unbaked pie shell; add top crust and bake at 400 degrees F for 30 minutes or until zucchini is tender.

Robin, I made this last year and you cannot tell the difference bewtween it and apple pie!

Ingredients

  • 4 cups zucchini
  • 1 1/2 tsp. cream of tartar
  • dash salt
  • 2 Tbsp. flour
  • 1 Tbsp. lemon juice
  • dash nutmeg
  • 1 1/4 cup sugar
  • Advertisement

  • 1 1/2 tsp. cinnamon
  • 1 tsp. butter (approx.)
  • 1 (9 inch) unbaked pie shell
Topping:
  • 1 stick margarine
  • 1/2 cup sugar
  • 1 cup flour

Directions

Peel zucchini; cut lengthwise and scoop out seeds. slice to resemble apple slices. Cook zucchini 10 minutes in a small amount of water; drain. Mix cream of tartar, salt, flour, lemon juice, nutmeg, sugar, and cinnamon with zucchini. Pour into unbaked pie shell. Dot with butter. Make topping by mixing margarine, sugar, and flour, crumbling over ingredients in pie shell. Bake at 375 degree F for 45 minutes. Takes like apple!

Ingredients

  • 3 cups zucchini (peeled and thinly sliced)
  • 2-3 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 1/4 cups sugar
  • 4 Tbsp. flour

Directions

Toss lemon juice and zucchini together. Mix dry ingredients, then add to zucchini. Dot with butter. Put into unbaked pie shells. Cover with top crust. Bake at 450 degrees F for 40-60 minutes or test with a toothpick to see if zucchini is done.

Ingredients

  • 7 cups zucchini
  • 1 1/4 cups sugar
  • 1 1/2 Tbsp. flour
  • 1 1/2 tsp. cream of tartar
  • 1 1/2 tsp. cinnamon
  • dash salt and nutmeg
  • 1-2 tsp. lemon juice
Crumbs
  • 1 cup flour
  • 1/4 cup sugar
  • 1/2 tsp. cinnamon
  • 1/4 cup margarine

Directions

Peel and slice zucchini lengthwise. Remove seeds and slice like apples. Add a little water and bring to a boil in a large saucepan. Simmer for a few minutes until tender. Drain well and cool. Add rest of ingredients. Place in an unbaked pie shell

p>Mix all crumb ingredients and spread over the top. Bake at 350 degrees F for 1 hour. Tastes almost like apple pie and is delicious!
