Onion Cheese Quiche
- 9 inch pie shell with high fluted rim
- 1 large onion, chopped
- 1 Tbsp. butter or margarine
- 3 eggs
- 1 1/2-2 cups milk
- 1 1/2 cups shredded Swiss cheese
- 1 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 4-5 chopped mushrooms
- 1 pkg. pastrami, chopped
Bake pie shell at 425 degrees F for 10 minutes. Cool. Saute' onion in margarine. Separate 1 egg and brush egg white on pastry shell. Pour excess white into large bowl, add yolk, remaining 2 eggs, milk, flour, salt and pepper. Beat until smooth. Stir in cheese, onion, mushrooms and pastrami. Turn into pie shell and bake at 325 degrees F for 40-45 minutes. Cool at least 10 minutes before serving. Serves 6.

This sounds great. All I have to do is omit the pastrami and I've got a great vegetarian quiche!
