Cream Cheese Chicken Croissants

This recipe can be used for lunches, snacks, or as appetizers, and it is just delicious!

Ingredients:

  • 1 whole chicken, can also be used with 4 skinless, boneless chicken breasts
  • 1 package of cream cheese (room temperature)
  • 3 celery sticks (diced)
  • 1/2 medium onion (diced)
  • 2 cups of sliced mushrooms
  • 2 cans of croissants
  • salt and pepper to taste

Directions:

Boil chicken until done.

After chicken is boiled, if using the whole chicken, remove skin, de-bone and shred.

Saute celery, onion, and mushrooms.

In a large bowl mix your shredded chicken, sauteed vegetables, salt and pepper, and cream cheese until well blended.

Take 2 triangles of the croissant and make into one square making it just a little bit thinner by lightly flouring your surface, and using a rolling pin.

Take chicken mixture and put 2 to 2 1/2 Tbsp. (more or less),and put in the middle of the croissant.

Take all the sides of the croissant and make like a ball, by pinching or folding dough to make sure mixture cannot escape while baking.

Bake on an ungreased cookie sheet. Check the croissants can for temperature, and baking time.

Serves 8. If using as an appetizer, use the original triangles and reduce the chicken mixture and it will make 16 delicious appetizers!
