Fat Pancakes

Ingredients

  • 2-3 eggs
  • 2 Tbsp. sugar
  • 1 1/4 cup flour
  • 1 tsp. salt
  • 1 pt. and 1 tsp. milk
  • 2 strips bacon

Directions

Fry bacon in skillet. Do not empty grease. Whip first two ingredients together. Stir in remaining ingredients. Pour batter into skillet. Skillet should be large and ovenproof. Batter should be 1/2-3/4 inches deep. Bake at 400 degrees F for 30 minutes. Will puff up a lot. Serve with syrup.

Question about the amount of milk--is it really one PINT and a teaspoon which is just over 2 cups? I ask because that's a huge amount of milk for 1-1/4 cups of flour. Are you sure it's not a cup of milk? Why the additional teaspoon? That would not even make a difference if it were left out. Just wondering.

it's true, but when we camp we add some bacon fat to the skillet and they are fantastic...so once in a blue moon would be just fine. :)

Well using bacon grease will certainly clog your arteries in no time. A cup of bacon grease has 1,823 calories 92 grams of fat and cholesterol 206 mg. Thanks but no thanks. I will omit the bacon grease.
