Corn Bread Layered Salad

Ingredients

  • 1 package corn bread muffin mix - like Jiffy
  • 6 green onions, chopped
  • 1 medium green pepper, chopped
  • 1 can whole kernel corn, drained
  • 1 can pinto beans, rinsed & drained
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 2 medium tomatoes, seeded and chopped
  • 1/2 cup shredded cheddar cheese

Directions

Prepare and bake corn bread according to package directions. Cool on a wire rack. Crumble corn bread into a 2 qt. glass serving bowl. Layer with onions, green pepper, corn and beans. In a small bowl, combine mayonnaise and sour cream; spread over the vegetables. Sprinkle with tomatoes and cheese. Refrigerate until serving.

THIS IS GOOD BUT SINCE I'M FROM LOUISIANA I LIKE A LITTLE MORE SEASONING.TRY ADDING COOKED GROUND BEEF SEASONED UP AS A LAYER.MAKES IT AN ENTREE.ALSO YOU CAN USE CANNED CHILI WITH BEANS.

How funny that this was just posted. I made it for my daughter 5 yr old bday party that adults also attended, but I mixed in a seasoning from my companies food line, Tastefully Simple, into the mayo/sour cream and it was delicious!!! Definitely make it again.
