Porcupine Meatballs I
I usually add homemade mashed potatoes and a veggie to round out this cheap but filling meal.
Ingredients
- 2 pounds hamburger
- 1 1/2 to 2 cups uncooked minute rice
- 1 can of tomato juice
Directions
Mix 2 pounds of hamburger and 1 1/2 -2 cups uncooked minute rice. Then form into meatballs. Add 1 can tomato juice and cook in a pan on the stove over a medium heat until meatballs appear brown. I usually put a lid on my pan as the tomato juice tends to splatter while cooking

Porcupine Meatballs II
Ingredients
- 1/2 cup uncooked rice
- 1 lb. ground beef
- 1 Tbsp. minced onion
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 can tomato soup
- 3/4 can water
- Dash of chili powder
Directions
Combine rice, beef, onion, salt, and pepper and form into balls. Mix soup, water and chili in pressure pan and add meatballs. Cook 12 minutes at 10 lbs. pressure.

Porcupine Meatballs III
Ingredients
- 1 lb. ground beef
- 1/4-1/2 cup uncooked long grain rice
- 1 egg (slightly beaten)
- 2 Tbsp. onion (chopped)
- 1/2 tsp. salt
- Dash of pepper
- 1 can condensed tomato soup
- 1/2 cup water
- 1 tsp. Worcestershire sauce
Directions
Combine meat, rice, egg, onion, salt, pepper and 1/4 of the soup. Mix completely and roll into balls. Place in pan. Mix soup, water and Worcestershire sauce; pour over meatballs. Bring to a boil. Simmer 40 minutes; stir often. Serve with cooked noodles.

Porcupine Meatballs IV
Ingredients
- 1 lb. ground beef
- 1 onion, chopped fine
- 1 egg
- 1 can tomatoes
- 3 slices bread, soak in water
- 3 Tbsp. rice, uncooked
- salt and pepper, to taste
Directions
Mix all except tomatoes. Make into small balls; brown in skillet. Pour tomatoes over them and simmer for 1 hour.

In version Porcupine Meatballs II, try mushroom soup for an elegant version - good enough to serve company, with a sprinkling of parsley!
I have made the tomato soup versions for years, often in large batches to freeze leftovers. They make excellent Meatball sandwiches with some spaghetti sauce, or fillings for tacos and burritos.

My mother made porcupine meatballs in the pressure cooker, when I was little. I want to try ground turkey. Would it taste the same?
