Ingredients
- 2 boneless, skinless chicken breasts, cut into bite size pieces
- 3/4 cup chopped purple onion
- 3/4 cup yellow squash, chopped
- 3 or 4 hot cherry peppers, sliced
- 6 oz. sugar snap peas
- 1/2 cup cashew nuts
- 1 Tbsp. honey
- 1/2 cup Jamaican Style Jerk Sauce
- Olive Oil
- Prepared brown rice
Directions
Coat wok or electric skillet with olive oil. On medium to medium high heat, cook chicken until almost done.
In separate bowl, mix onion, squash, peppers and jerk sauce. Add to chicken and cook until tender.
Add cashews, honey and peas and cooked brown rice. Toss until coated and heated through.
Serve immediately with a nice bread.
