1 can stewed tomatoes or stew 3 of your own fresh tomatoes
1 jalapeno pepper, diced
4 cups Monterey Jack cheese, grated
1/4 cup light cream
tortilla chips
Directions
Heat olive oil in a skillet and saute' the onion until tender. Add the tomatoes and jalapeno pepper. Cook for 10-15 minutes. Add the cheese and cream and continue to heat for several minutes, stirring continuously. Serve warm with tortilla chips.

Saute' onions in oil. Add remaining ingredients and simmer 1 1/2-2 hours. Serve with corn chips.

Ingredients
2 cups chopped onions
3 Tbsp. oil
1 can tomatoes, undrained (16oz.)
1 can hot green chilies
1 tsp. freshly ground pepper
1 tsp. salt
1 Tbsp. sugar
1 can tomato paste (4 oz.)
1 lb. cheddar cheese, shredded
corn chips
Directions
