Chili Con Queso

I love deep frying or baking my own tortilla chips made from corn tortilla's rather than store bought pre-made chips ;-)

Ingredients:

  • 16 oz package Mexican Velveeta Cheese (your choice of heat), cubed
  • 1/2 to 3/4 cup Ortega Chunky Salsa (your choice of heat)
  • Tortilla chips

Directions:

Place cheese and salsa in a saucepan over medium low heat. Stir constantly until cheese is melted, transfer to a bowl and serve. Or you can place in a microwave safe bowl on high in one minute increments, stirring after each minute, until cheese is melted and serve.

Tip: Chili Con Queso

Ingredients

  • 1 Tbsp. olive oil
  • 1 sweet onion, diced
  • 1 can stewed tomatoes or stew 3 of your own fresh tomatoes
  • 1 jalapeno pepper, diced
  • 4 cups Monterey Jack cheese, grated
  • 1/4 cup light cream
  • tortilla chips

Directions

Heat olive oil in a skillet and saute' the onion until tender. Add the tomatoes and jalapeno pepper. Cook for 10-15 minutes. Add the cheese and cream and continue to heat for several minutes, stirring continuously. Serve warm with tortilla chips.

Ingredients

  • 2 cups chopped onions
  • 3 Tbsp. oil
  • 1 can tomatoes, undrained (16oz.)
  • 1 can hot green chilies
  • 1 tsp. freshly ground pepper
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1 can tomato paste (4 oz.)
  • 1 lb. cheddar cheese, shredded
  • corn chips

Directions

Saute' onions in oil. Add remaining ingredients and simmer 1 1/2-2 hours. Serve with corn chips.

  • 1 tsp. chopped onion
  • 1/4 stick margarine, melted
  • dash garlic powder
  • Tabasco sauce, to taste
  • 1 jar taco sauce
  • 1 lg. package Velveeta cheese, cubed

Directions

Saute' onion in margarine in skillet. Add garlic powder, Tabasco and taco sauce, mixing well. Add cheese gradually, stirring constantly until melted. Serve warm with tostados.
