White Bean Chili

This main dish soup, besides being delicious, is quick, and easy to make.

Ingredients:

  • 2 lbs. cubed skinless chicken breast
  • 2 Tbsp. olive oil
  • 1 bag frozen seasoning mix (onions, bell pepper, celery)
  • 1-2 Tbsp. minced garlic
  • 2 tsp. cumin
  • 2 cans chicken broth
  • 4 cans Northern White beans
  • 16 oz. Pace Picante Sauce (mild)
  • tortilla chips
  • Pepper Jack cheese (grated)

Directions:

In a large pot brown the chicken in olive oil. Add minced garlic, and seasoning packets. Add the beans, chicken broth, cumin, and picante sauce.

Cook thoroughly until chicken is well done stir frequently.

Serve with white tortilla chips, and grated pepper jack cheese. You can also add sour cream if you wish.

Recipe: White Bean Chili

Ingredients

  • 1 bag dry Great White Northern Beans
  • 1 can Rotel tomatoes
  • 1 package white chili mix (OR) Chicken Taco Mix
  • 4 chicken pieces (breast, thighs, etc.)
  • 3-4 cups chicken stock

Directions

Wash beans well and place in crock pot with all other ingredients. Cook overnight. Take out chicken, remove bones, and return chicken to crock pot.

Serve with crackers or tortilla chips!

Ingredients

  • 4 cans White Northern Beans
  • 1 can Ro-Tel tomatoes
  • 1 package white chili mix or chicken taco mix (located with other packages of chili, taco, gravy mixes, etc.)
  • 2 large cans (13 oz.) chicken

Directions

Mix all together in crock pot and cook 2-4 hours.
