Crawfish Cornbread

Ingredients:

  • 1 cup self rising flour
  • 1 cup cornmeal
  • 1 cup cooking oil
  • 1 cup milk
  • 2 egg
  • 4 Tbsp. sugar
  • 1 tsp. salt
  • chopped jalapenos to your taste
  • 1 lb. crawfish
  • 1 lb. cheese
  • 2 cans creamed corn
  • chopped onion

Directions:

In a large bowl mix all dry ingredients.

In a separate bowl beat eggs, milk, and 1 can corn. Then mix dry and wet ingredients. Stir well.

Pour half of mixture in an oiled aluminum pan, layer onion, crawfish, cheese, jalapeno, cream corn, then pour remaining mixture on top. Bake for 35-45 min or till brown. Let cool about 5 min best to serve hot.
