Creole Liver and Tomatoes
Something different from the ordinary
- 1 (8-oz.) can tomato sauce
- 1 (16-oz.) can tomatoes
- 1/2 cup chopped green pepper
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1 3/4 pound beef liver, cut into strips
- 2 Tbsp. oil
- 3 cups cooked rice
Mix tomato sauce and tomatoes with green pepper, celery, onion, salt and pepper. Simmer 15 minutes. Cook liver in oil until light browned. Add to tomato mixture; simmer 30 minutes or until liver is tender.
Serve over rice.
