Fried Red Tomatoes

Personally I don't care for Fried Green Tomatoes, unless we're talking about the movie Fried Green Tomatoes. Here's a Red Fried Tomatoes recipe I came up.

Ingredients:

  • 2 Plum tomatoes cut in half lengthwise
  • 6 Tbsp. fresh basil, finely chopped
  • 1/2 tsp. salt
  • 5 tsp. extra virgin olive oil, plus 2 Tbsp. for frying
  • 4 heaping tsp. shredded Mozzarella or Parmesan cheese

Directions:

Mix together the 5 tsp. of olive oil, basil, salt, and pepper in a small bowl. Spread mixture on cut side of each tomato half.

Heat remaining 2 tablespoons olive oil in small skillet over medium low heat. Place tomatoes, mixture side down, in the skillet and cover. Simmer for 3 minutes, turn over and sprinkle each half with 1 heaping tsp. of the cheese. Cover and simmer 2 more minutes.

Serve immediately but tasty at room temperature, too.

Both of these two recipes sound great. I can almost taste the tomatoes and I think they would go good with some simple garlic and cheese bruchetta.

This looks great. I'm going to try it with the tomatoes I just bought. Here's one that my grandma taught me:
sliced tomatoes (fairly thick slices)

Dredge in mixture of flour, salt and a little bit of black pepper. Also sprinkle with a tiny pinch of sugar on each side.
Cook in a little bit of oil in a frying pan till nicely browned on each side (the sugar helps with the browning and adds a great sweetness to them!)
