- 1 medium eggplant
- 1 beaten egg
- 2 Tbsp. melted butter
- 1 small onion, finely chopped
- 1 cup dry bread crumbs
- 1/2 cup buttered bread crumbs
- salt and pepper
Pare eggplant and cut in small cubes. Cook until tender. Drain well; add salt and pepper, to taste. Add egg, butter, onions and dry crumbs. Mix and place in greased baking dish. Cover with 1/2 cup buttered crumbs. Bake 30 minutes at 375 degrees F. Serves 6.

Toast your bread crisp then butter it, cut in little pieces about an inch in size.
