Cucumber-Yogurt Salad

Healthy, tasty salad.

Ingredients:

  • 2 lg. cucumbers, thinly sliced
  • 1 Tbsp. coarse salt
  • 2 cup low-fat yogurt
  • 1/2 cup low fat sour cream
  • 1 tsp. ground cumin
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp. salt
  • 2 med. tomatoes, seeded, chopped
  • curly leaf lettuce

Directions:

Sprinkle cucumbers with coarse salt; cover. Let stand, covered, for 30 minutes. Rinse several times in cold water; drain well. Squeeze dry with paper towels. Set aside. Mix yogurt, sour cream, cumin, cilantro and 1/2 teaspoon salt in small bowl. Chill, covered, until serving time. Combine cucumber, yogurt mixture an tomatoes in large bowl; toss gently to mix well. Spoon into lettuce-lined salad bowl.

Recipe: Cucumber-Yogurt Salad

Ingredients

  • 1 cucumber
  • 1 small onion, finely chopped
  • 1/2 cup plain yogurt
  • 2 tsp. chopped mint
  • 2 tsp. chopped parsley
  • Dash hot-pepper sauce

Directions

Peel cucumber; remove seeds. Coarsely grate cucumber. Press moisture out of cucumber. In a medium bowl, combine grated cucumber, onion, yogurt, mint, parsley and hot-pepper sauce. Cover and refrigerate one hour. Makes about 2 cups.

Very good served with pork.
