Balsamic Onion And Feta Crostini

Mmm Mmm good!


  • 12 (1/4 inch) slices French baguette
  • 3 Tbsp. plus 2 Tbsp. extra virgin olive oil
  • 1/8 tsp. plus 1/8 tsp. salt
  • Ad
  • 1/8 tsp. plus 1/8 tsp. pepper
  • 2 cups red onions, very thinly sliced
  • 2 Tbsp. balsamic vinegar
  • 4 oz. feta, flavored if desired, finely crumbled


Preheat oven to 350 degrees F.

Brush bread with 3 tablespoons of the olive oil, evenly sprinkle with 1/8 teaspoon salt and 1/8 teaspoon of the pepper, place on a baking sheet and bake until just golden, about 10 minutes.

Meanwhile, heat the remaining olive oil in a skillet; add onions and cook, stirring occasionally, until tender, about 8 minutes. Add vinegar and cook about 30 seconds longer, sprinkle with remaining salt and pepper and cool to room temperature.

Top the crostini evenly with the onions and feta and serve.
